Gooey Cocoa Brownies

Nearly 2 years ago, in the early days of honey & jam, I blogged a recipe called supernatural brownies. Those brownies are delicious, and I’ve been making them regularly ever since. I was pretty sure they were the perfect brownie, but oh, I was wrong.

A couple of weeks ago, I tweeted about needing a new brownie recipe, because I wanted to make some quick and I didn’t have the ingredients to make my favorite recipe. Jeannette from everybody likes sandwiches sent me a link to this recipe. I’ve made them 4 times in 2 weeks.

These brownies are a revelation. Gooey, deeply chocolatey, and not a bit too sweet. Plus, you only need cocoa powder, not bar chocolate, they take about 5 minutes to throw together and only 25 to bake. Perfection? Pretty dang close.

Best Cocoa Brownies

Adapted from Alice Mendrich’s Bittersweet via smitten kitchen
Makes 16 larger or 25 smaller brownies

10 tablespoons (1 1/4 sticks, 5 ounces or 141 grams) unsalted butter

1 1/4 cups (9 7/8 ounces, 280 grams) sugar

3/4 cup plus 2 tablespoons (2 7/8 ounces, 82 grams) unsweetened cocoa powder (natural or Dutch-process)

1/4 teaspoon salt

1/2 teaspoon pure vanilla extract

2 large eggs, cold

1/2 cup (66 grams, 2 3/8 ounces) all-purpose flour

2/3 cup walnut or pecan pieces (optional)

Position a rack in the lower third of the oven and preheat the oven to 325°F. Line the bottom and sides of an 8×8-inch square baking pan with parchment paper or foil, leaving an overhang on two opposite sides.
Combine the butter, sugar, cocoa, and salt in a medium heatproof bowl and microwave for 1:30 minutes. Remove and stir until the butter is melted and the mixture is smooth. Set aside briefly until the mixture is only warm, not hot. It looks fairly gritty at this point, but don’t fret — it smoothes out once the eggs and flour are added.

Stir in the vanilla with a wooden spoon. Add the eggs one at a time, stirring vigorously after each one. When the batter looks thick, shiny, and well blended, add the flour and stir until you cannot see it any longer, then beat vigorously for 40 strokes with the wooden spoon or a rubber spatula. Stir in the nuts, if using. Spread evenly in the lined pan.

Bake until a toothpick plunged into the center emerges slightly moist with batter, 25 to 30 minutes. Let cool completely on a rack.

Lift up the ends of the parchment or foil liner, and transfer the brownies to a cutting board. Cut into 16 or 25 squares.

  7. These are very similar (judging by the ingredient list) to what my grandmother calls "Sultana Brownies." If I remember correctly, the recipe was on the side of a box of Sultana Cocoa...we're talking back in the 1930's or 1940's. And yes, these are hands down my favorite brownie. To me, most other "brownies" are really just cake. Don't get me started on frosted brownies...

  66. A couple of months ago I did the sweets for a friend's wedding (a small wedding – only 30-40 people all up), and I did 6 different types of petits fours. One of them was this brownie (via Smitten Kitchen as well), sliced into little inch squares and put in individual white patty pan cases. So classic looking, and they worked so well because the taste is just the right balance of sweet and intense bitter cocoa that an inch square (or maybe 2) is all you want anyway!

  68. hi there. i tried these brownies today and i must have messed something up. my brownies were fudgy like yours - but the top of the brownies did not come out like yours? The taste was amazing, but there was a raw flour taste to them, not sure if you can tell me where I might have gone wrong. But I will try these again.

  77. I got confused for a second where it said to microwave the first butter mixture. It says 1:30 minutes and at first I thought it meant 1 hour, 30 minutes until I saw that the butter wouldn't be melted yet! Might want to change that lol!

    1. This might have something to do with the cocoa powder you are using. I had been making these with Nestle cocoa powder and they always turn out delicious. Today I tried Ghirardelli cocoa powder (IMO, much better quality than Nestle) and they were on the bitter side. The Ghirardelli was a much darker color than the Nestle. You can probably get away with using less of it or maybe add more sugar.

  82. These were awesome! The microwaving part was a little strange, and I was curious as to what the texture would be like with butter instead of oil, but it was great!! I probably should have kept them in the oven for a few minutes more, the edges were perfect and the middle was a little too gooey for my liking (which was even less gooey than shown in your photos!). Great recipe, super rich, dense, moist brownies. I only needed one to satisfy my chocolate craving and it made me feel full. I was worried an 8x8 pan wouldn't last long in my house, but I actually just wrapped half a pan's worth in aluminum foil and stuck them in the freezer as an emergency stash. I used Nestle cocoa, and I even used salted butter and they turned out wonderful :) Thanks!

  83. i have these in the oven and if the smell from melting the butter, sugar and cocoa is anything to go by these will be my new go to recipe. i dont have a microwave and i put the ingredients in a pot on the stove and it turned out ok, if a little weird. next time i might melt the butter first. thank you!
