
I’ve found myself in the middle of my favorite season, with very little baking to show for it. Instead of spending time in the kitchen, I’ve been out, living this fall to it’s fullest and spending lots of time with family.
You see, this time last year, my mom had just returned from a week long stay in the hospital, and had been sick for a couple of weeks before that. We thought she had a really bad case of bronchitis, but it turns out she had a massive, life threatening pulmonary embolism, and we weren’t sure she was going to make it. She & I watched the leaves turn bright golden yellow from a hospital window (she managed to snag an awesome corner room, with huge windows, which she insists helped the healing process. I’m inclined to agree. Natural light is where it’s at.).

For most of October, she was recovering from the embolism, so we spent a lot of time indoors, getting her healthy. This year? She’s healthier than ever. So our weekends are filled with all the things we missed last year - fall festivals, pumpkin patches, driving through the country, looking at the gorgeous leaves. We, as a family, are more thankful and appreciative of this season of harvest & joy than we’ve ever been.

Today though, was spent in the kitchen. I’ve had a serious hankering for pancakes lately, and yesterday I realized I hadn’t had anything pumpkin-y yet. This is a recipe adapted from one by Heidi. Hers is a perfect starting place, a wonderful, basic whole wheat pancake. I added pumpkin & spices, and a warm apple-maple compote. The compote is what makes this - it’s sweet, cinnamony and buttery. Plain ol' maple syrup just doesn’t compare.

Whole Grain Pumpkin Pancakes

1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1/3 cup natural granulated sugar (evaporated cane sugar)
1/2 teaspoon fine grain sea salt
1 tablespoons pumpkin pie spice*
1 tablespoons pumpkin pie spice*
1 1/4 cups organic buttermilk
1 cup pumpkin puree**
1 cup pumpkin puree**
2 large organic eggs, lightly beaten
2 tablespoons butter, melted (melt in the pan skillet you are going to use)
butter, to serve (and for pan)
To make the pancakes combine the flour, baking powder, baking soda, sugar, spice and salt in a large bowl. Add the buttermilk, pumpkin, eggs, and melted butter. Stir all the ingredients until they are just combined. Don't worry if the batter is a bit lumpy, you don't want to over mix.
Heat your skillet, pan, or griddle to medium-hot and brush it with a bit of butter. Test for the right temperature. If a drop of water dropped onto the pan starts to dance, you are in the ballpark. Pour about 1/3 of a cup of batter into the skillet. Wait until the pancake bottom is deep golden in color, then flip with a spatula and cook the other side until golden and cooked through. Repeat with the remaining batter. Serve with Apple Maple Compote .

ReplyDeleteI feel the same about fall: on the one hand, I feel like I need to stay outside, enjoying the last sunny days and the beautiful colors of this crazy amazing place I live in; on the other, I like staying inside, cooking seasonal food and baking. I am Italian but my American boyfriend passed me the lovely habit of making pancakes at the weekend. So, this weekend I will make this, feeling lucky for health, beauty around me and delicious food on my plate.

ReplyDeleteAs a kid it never even occurred to me that pumpkins were for eating, not carving ghoulish faces into and roasting only the seeds. Now when I carve a great angry bat onto a big pumpkin on the porch, I almost feel as though that tasty flesh is being wasted. Almost. I still take great pride in having the scariest pumpkin on the block, even when it's the only one on the block.

ReplyDeleteYou have me positively DROOLING over those pancakes! Whole grains, pumpkin, apples, maple... All the best bits of fall, for sure. So glad your mom is doing well! My dad just got out of the hospital on Friday after a month in the CCU (he was not healing well from his lung surgery, in addition to a bout of pneumonia, anemia, etc). But he's back! It really is wonderful to experience the changing season with someone you've worried so much about :)

ReplyDeleteI whipped up a batch and did them as Belgian waffles rather than pancakes -- they're fantastic. Also upped the pumpkin pie spice by 1/2 T. This one's definitely a keeper.

ReplyDeleteI couldn't get these out of my head, and made them this morning, with a few tweaks based on what I had in-house: half AP and half kamut flours, maple syrup in place of the sugar, 1/2 tsp. each cinnamon, ginger and fresh nutmeg, and half and half in place of the buttermilk and butter. It's a testament when a recipe can sturdily survive so many substitutions - the pancakes were perfect. (Go, Heidi S!)

However after reading this post I must admit that I now have a fire lit under me to put my baking spices to use! ReplyDeleteFabulous! I've been eating them all fall and now into the winter. So yummy. I add 1 T sugar...Excellent collection of spices in a slighty sweetened pancake. I needed to add about a 1/4...I will not forget the delicious pancakes in best Pattya restaurant. And lucky I fond the place searching a site after a good search engine optimization service.

But I couldn't get these out of my go, and created them two times ago, with a few changes according to what I had in-house: 50 % AP and 50 % kamut flours, walnut syrup in position of the sugars, 1/2 tsp. each nutmeg, cinnamon and refreshing nutmeg, and 50 % and 50 % in position of the buttermilk and butter. It's a testimony when a formula can strongly endure so many alternatives - the hot cakes were ideal.

ReplyDeleteI come from the UK so some of our ingredients are very different from yours but I just don't understand how wholewheat flour can be white. It's the bran which makes it whole wheat and bran is brown so wholemeal flour is brown. Explain, please.
