Appalachian Spring & Strawberry Balsamic Black Pepper Jam

 Spring is here full force in the south, glorious and green. I'm making the most of the bounty it brings by standing over my stove and making far too much jam. Last week it was this sweet-savory strawberry balsamic. It's lovely on an english muffin with few strips of bacon.  I'm trying out rhubarb vanilla today, fingers crossed it's just as good!

Strawberry Balsamic Black Pepper Jam
Adapted from Epicurious

4 cups strawberries, chopped
3 cups sugar
5 tablespoons balsamic vinegar
1 1/2 teaspoon cracked black pepper
 
 In a small heavy saucepan bring all ingredients to a boil, stirring, and skim surface. Simmer mixture, stirring and skimming foam occasionally, 15 minutes, or until thickened and translucent. Remove pan from heat and cool preserves completely. Jam will keep, covered and chilled, 1 month.

  6. I visit my Dad in the mountains of North Carolina every summer and I can't get over how gorgeous the scenery is. They have the best produce I've ever tasted, too. I love the peppery sharp flavors in this jam.

  24. Every spring/summer our starfruit tree would produce a crazy amount of starfruit. We would then proceed to give it to everyone we knew and make vast amounts of starfruit jam. Not very common here but its pretty good :)

  44. This post singlehandedly made me make jam this weekend. I made rhubarb rosemary vanilla jam and a couple jars of strawberry basil balsamic. My first try, and the results were decent, but can be greatly improved. I can't wait to try a few more combinations this week!

  48. I've never made jam before, but I somehow stumbled upon this recipe and gave it a shot. O.M.G. this is SO good! I love how the balsamic deepens the flavor of the strawberries and cuts the sweetness to a perfect level, and the little bites of heat from the cracked pepper are perfect!
