Honestly, I'm not really a chocolate fan. I much prefer other flavors, vanilla, cinnamon, etc. But someone had commented on one of my entries about how good these were, so I had to try them. And they were very good. Super moist, and not overly sweet (well, i did leave out 1/4 cup of sugar, I didn't have enough!). I'll definitely be making these again, I think next time I'll try the mocha frosting. I just sprinkled these with powdered sugar. yum.
One Bowl Chocolate Cupcakes
from Martha Stewarts Baking Handbook
Makes 2 dozen
ingredients:
2 1/2 cups all purpose flour
1 1/4 cups dutch process cocoa powder
2 1/2 cups sugar
2 1/2 teaspoons baking soda
1 1/4 teaspoons baking powder
1 1/2 teaspoons salt
2 large eggs, plus 1 large egg yolk
1 1/4 cups milk
1/2 cup plus 2 tablespoons vegetable oil
1 1/4 teaspoon vanilla extract
1 1/2 cup warm water
Preheat the oven to 350.
Sift together flour, cocoa, sugar, baking soda, baking powder and salt into the bowl of an electric mixer.
Attach bowl to a mixer fitted with the paddle attachment. add the eggs, egg yolk, milk, oil, vanilla and warm water. Beat on low speed until smooth and combined, about 3 minutes.
Divde evenly among the muffin cups, filling each about two thirds of the way. Bake for 20-25 minutes.

enjoy.
Aren't these cupcakes so good?! They were the moistest, softest cakes I've ever made. I hope you enjoyed them as much as I did :)
ReplyDeletethey are! Thanks so much for recommending them, i probably wouldn't have tried them myself.
ReplyDeleteOh they look just lovely! I suppose that is an actual photo? looks good enough to eat! haha. :)
ReplyDeleteI enjoyed your blog.

Beautiful! I'm just blown away by your photography every time I visit.
ReplyDeleteWhat kind of a wrapper is that? How big is it? Where do you get it? I like it.
miss jocelyn: yes, it is a photo of the cupcake! they were delicious.
ReplyDeletemrs. mordecai: thank you so much! : ) those are actually "nut and party cups" like these: http://www.wilton.com/store/site/product.cfm?id=3E315459-475A-BAC0-584733D0E13452B6
they are just a little less wide and a little taller than normal cupcake liners. i think i got them at target.
I just love simple and easy recipes that have that gourmet taste & texture.
ReplyDeleteI'm saving this one....
I love chocolate and can't wait to make these!!! The photos, as usual, are great!
ReplyDeletei prefer vanilla too. but these are cute :)
ReplyDeleteI like chocolate but in general I prefer other flavours like vanilla well. These chocolate cupcakes look good!
ReplyDeleteHappy new year!
these cupcakes are amazing! i used ghiradelli chocolate powder and cocoa instead of dutch process and used less sugar according to the package. sooo good.
ReplyDeleteThese turned out pretty well, though I don't know what kind of muffin/cupcake tins you have because I ended up with 3 1/2 dozen!
