Honestly, I'm not really a chocolate fan. I much prefer other flavors, vanilla, cinnamon, etc. But someone had commented on one of my entries about how good these were, so I had to try them. And they were very good. Super moist, and not overly sweet (well, i did leave out 1/4 cup of sugar, I didn't have enough!). I'll definitely be making these again, I think next time I'll try the mocha frosting. I just sprinkled these with powdered sugar. yum.

One Bowl Chocolate Cupcakes
from Martha Stewarts Baking Handbook

Makes 2 dozen

ingredients:

2 1/2 cups all purpose flour
1 1/4 cups dutch process cocoa powder
2 1/2 cups sugar
2 1/2 teaspoons baking soda
1 1/4 teaspoons baking powder
1 1/2 teaspoons salt
2 large eggs, plus 1 large egg yolk
1 1/4 cups milk
1/2 cup plus 2 tablespoons vegetable oil
1 1/4 teaspoon vanilla extract
1 1/2 cup warm water


Preheat the oven to 350.

Sift together flour, cocoa, sugar, baking soda, baking powder and salt into the bowl of an electric mixer.

Attach bowl to a mixer fitted with the paddle attachment. add the eggs, egg yolk, milk, oil, vanilla and warm water. Beat on low speed until smooth and combined, about 3 minutes.

Divde evenly among the muffin cups, filling each about two thirds of the way. Bake for 20-25 minutes.

    they are just a little less wide and a little taller than normal cupcake liners. i think i got them at target.

  10. these cupcakes are amazing! i used ghiradelli chocolate powder and cocoa instead of dutch process and used less sugar according to the package. sooo good.
