Homemade Pizza Crust

My grocery store stopped selling pizza crusts. Just stopped carrying them, no warning at all. I guess I should first explain I live in a very small town. I’m guessing the the demand for pre-baked pizza crusts just wasn’t that high.

But I really loved them. So easy! Just top them with whatever toppings you want and stick them in the oven.

I’ve always kind of been scared of making my own pizza crust, it seemed too hard, like it was something that should be left to the masters.

But I really wanted pizza. So I decided to go ahead and try to make it, figuring I’d fail. (by the way, that’s why the pictures in this post are so bad, I never thought it would work, so I didn’t put any effort into it! hahaha)

I found this recipe in King Arthur Flour’s Bakers Catalouge. It seemed simple enough, so I got to work.

I was so surprised at how good it was! It actually tasted like pizza crust, not something vaguely resembling pizza crust. This will totally be my go-to recipe when I want pizza now. I’m so glad I tried.

Pizza Crust
adapted from King Arthur Flour’s Bakers Catalogue
3 3/4 cups of High-Gluten flour (I just used bread flour)
1 tablespoon pizza dough flavor (I didn’t have this, so I used a tbsp. of garlic powder and some fresh basil)
1 teaspoon instant yeast
1 1/4 teaspoon salt
2 tablespoons olive oil
1 1/2 cups lukewarm water

Mix and knead together all of the ingredients - by hand, mixer or bread machine (I just used the dough hook on my kitchen aid) till you’ve created a smooth, soft dough.

Allow the dough to rise, covered, for 1 hour.

Divide the dough in half. Shape both pieces into a 10” to 14” circle or rectangle and place each on a piece of parchment paper or on a greased pan. Allow to rise for 30 minutes or so, covered, while preheating the oven to 475.

Bake the crust for 8 minutes, until set, before topping with sauce and cheese; then bake for an additional 4 minutes.

    i love homemade pizza dough too. a trick that i use is to prebake the crust until lightly golden brown. then i will put the toppings on the pizza and pop it back into the oven until the cheese is lightly golden brown yuuummmmmyyyyy! i like thinly sliced red peppers on mine with the gooey cheese and my sauce. i have a totally easy and yummy sauce recipe..let me know if you want it....sherry

  5. I LOVE making homemade pizza crust. I usually make a bunch and freeze 'em in personal sizes so I can grab them for a meal.

  6. YUM! I had the same thought about pizza crust...I thought it was way too hard also! I think I got a recipe off of allrecipes.com and I just exchanged half of the white flour for wheat...my dh loves the hearty taste!

    We have homemade pizza on Friday nights! :)

  7. I've been making my own pizza dough lately too. I've pretty much given up buying breads and it's so exciting to be using my bread machine weekly. And getting my hands all doughy too with breads not in the machine.

  8. That looks really yummy! I keep trying to convince my Mom to use white flour for our pizza crust. We grind our own wheat, so we always use whole wheat flour in everything.

    I miss the white flour days :/

  9. I've been wanting to make homemade pizza crust for years, but, like you, never felt like I would be quite up to the task. I'll definitely try this recipe, maybe even tonight. My hubbie would be so thrilled to come home to 100%-homemade pizza!

  11. I love making my own crust! I was scared at first, too. But now I do it all the time! Alton Brown's recipe is my favorite. It's on my blog somewhere. I changed it up a bit when I made it, and it's super chewy and yummy! :D

  14. I always make my own pizza crust - this sounds like a good recipe, however I use Ina Garten's recipe. It's simple and delish, too. I think you' d like it. ~ Robyn

  15. thanks for posting this recipe. We made this a couple of days ago and it was a hit with the 3 kids and the hubby. I added a teaspoon of sugar (don't know why) and it turned out so delicious. This crust was soft and fluffy. We will make this often. Thanks again!
